I can’t possibly have a blog with “cookies” in the title and not share some recipes, right?
Look at the yumminess here….can you smell the chocolate? Serve it on a flip flop plate and what can be better? 😉 This is a special cookie in our family that we grew up with. They are called Whoopie Pies….two chocolate cookies with a creme filling. We usually follow the recipe and make the vanilla frosting. But a few months ago I happened to go to a Farmer’s market that had an Amish stand selling these cookies. They had a few varieties and one had a mint frosting. I wanted to try one but a child ahead of me got the last one. 🙁 LOL. Well, I finally got around to making some with mint frosting and they are just as yummy!

Whoopie Pies

1 cup Crisco shortening
2 cups sugar
2 egg yolks (save the whites for the filling)
1 cup sour milk (add 2 T. vinegar to regular milk)
1 cup hot water
4 cups flour
1 cup cocoa
2 tsp. baking soda
1 tsp. baking powder
½ tsp. salt

Mix and drop by large spoonfuls onto a cookie sheet. Bake for 9 min. at 400 degrees. Remove from pan and let cool. Spread filling between 2 cookies.

Filling:

1 cup Crisco
2 tsp. vanilla
4 T. flour
2 T. milk
2 egg whites
1 lb. box confectioner’s sugar (about 4 cups)

Mix well and beat a few minutes.

For the mint frosting, I just substituted mint extract for the vanilla and added a few drops of green food coloring. Enjoy!
