Boston Creme cupcakes

Boston Creme cupcakes = seriously yummy!!!

Just had to share.  :0)

You can bet I’ll be scrapping this in a 6×6 page!  But in the meantime, here’s the recipe.  Enjoy!

Boston Creme Cupcakes

1 1/4 cups whole milk

1 (3.4-ounce) box vanilla instant pudding and pie filling mix

1 teaspoon vanilla

18 pre-made cupcakes baked from a yellow cake mix

1/2 cup heavy cream

1/2 package (6 oz.) semisweet chocolate morsels

Combine milk, instant pudding mix, and vanilla in a large bowl. Beat mixture for 2 minutes, or until it thickens. Place mixture in refrigerator for 15 minutes. Spoon filling into a pastry bag fitted with a medium-size plain tip. Fill cupcakes with vanilla pudding filling by inserting tip into top of cupcake and squeezing filling into each cupcake.

Heat cream in a small heavy saucepan over medium heat until bubbles appear around the edges. Remove from heat, add chocolate morsels to pan, and whisk until smooth. Cool slightly.  Spoon or drizzle glaze over cupcakes, or dunk the tops into the glaze. Refrigerate until set, at least 1 hour, before serving.

*note- The original recipe called for 1 Tbsp. of vanilla but I cut it down to 1 tsp.  It also called for 12 cupcakes but I was able to fill 18 with the filling.  And the original recipe called for double the ingredients for the chocolate glaze but it was way too much so I cut it in half…the amount above should be about right.

Edit:  To answer your questions…I used a medium to large size tip. It could have been a bit smaller but I went with what I had and it worked fine. You will be able to tell when the cupcake has enough filling…it starts to swell. 

I have filled cupcakes in the past with regular frosting (learned this from my mother-in-law years ago) but I was afraid these would get mushy from the pudding filling.  Not the case!  The pudding kept the cupcakes nice and moist.  Nothing worse than dry cake, huh? 

stuffed strawberries…yum!

I have a really sweet recipe page today!  I made these for a “girl’s night out” (stamping with my friends) a few weeks ago and they were gone in a flash!  Yummo!  It all started when Jenn Balcer posted a photo online of some stuffed strawberries and I knew right away I wanted needed to try making them.  I compared a few recipes I found and scribbled down the amount of ingredients I chose to use.  Then I decided that I needed to dip them in chocolate…um hum!

The paper-pieced strawberry is from Paper Smooches Fruitastic.  Since I like to scrap my recipes, I knew this was a must have set!  The sentiment at the top is from Sugar Rush.  It really says You make Life sweet but I omitted the “you”.  The dashed lines under the title are from Santa Paws.

This recipe page was created for the Paper Smooches Sparks Challenge.  The bright pink flower in the photo inspired me to use the strawberry image.  I added red accents but I had to switch out the blue accents for green to match my papers.  And I added a clear gemstone accent.

pasta salad…yum!

Now that warmer weather is finally here I am hungry for summer pasta salads again!  I guess I was just wishing for warm weather back in February when I made this dish for a get together with friends.  They all loved it and asked how I made it but I was almost embarressed to say how simple it was.  LOL.  Sometimes the simple dishes are the best though so I decided to scrap it for the 6×6 recipe swap at the Spring Fest I attended.  This is the last project I have to share from that event.

Enjoy!  I am off to take some meds and hopefully hit the pillow early tonight.  I am battling yet another sinus infection…I’ve actually had this off & on since January…yuck.

in a pink! mood lately…

I’ve been in a “pink” mood…don’t know why.  Maybe it’s all this yucky weather and wishing for sunny days and springtime flowers.  We got one or two teases of spring…and we’re back to cool, rainy days.  pffft.  My DD and friends tell me that it snowed in the Buffalo area and other parts of NY yesterday.  Say it ain’t so!  ugh!

At least I can create my own spring on paper!  This card was made for a dear friend who’s birthday is this week.  And of course I made it before I headed out the door on Saturday when I was going to see her.  No time for coloring here…so I relied on a pretty 2-step image from SU!

I also made a few extra and changed out the words so I could use them for  thank you cards.  It’s a pretty versatile image and design, I think.

The photo corner was punched and then scored in the center with my Scor-Pal.  I folded it and sponged the center for a slightly different look.

Here’s another pink obsession I have lately…Triple Berry Smoothies!  Yum!  Imagine my disappointment this weekend when Sam’s Club was out of strawberries.  LOL.  The horrer!  😉

I recently ordered and received the Ninja… ♥ !

Here’s what I put in them…

1 1/2 cups of mixed strawberries, blackberries, and  raspberries

1/2 cup vanilla yogurt

1/2 cup milk

2 tsp. sugar, adjust to taste

1 cup crushed ice

I also substituted blueberries or peaches for the raspberries.  Use any fruit you like!  And when I ran out of yogurt, I used peach ice cream instead which made it even better….gee, I wonder why…LOL.

Tonight I’m going to try making ice cream in the Ninja…supposedly it only takes 30 seconds!  :0)

I hope you had a great weekend!  We had a nice visit with family but I’m so glad we’re home.  It was raining when we left yesterday but the roads turned horrible along the way and it snowed like crazy here.  Enough of the white stuff…I’m sooo ready for Spring!

I’m just popping in with another project from last weekend’s shoebox swap.  This was my recipe card for the 6×6 recipe swap.  I borrowed the recipe from my friend, Tracy.  You can see her recipe here.  These are so easy to make and SO yummy!

I didn’t have any stamps to go with danishes so I just tried to go with “cute”.  lol.  I hope you have a great Monday.  Crossing fingers for some sunny, snow-free days soon!

6 x 6 mac & cheese

I’m taking a break from the Christmas cards today to share a recipe page I recently made.  I’ve been making Paula Deen’s mac & cheese for a while now and since it’s one of our favorites, I wanted to scrap it for my girls.

Just a simple color-blocked layout paired with a House Mouse image.  The cheese is by Hambo.

6 x 6 frosting recipes

This is my last pic to share from the stamping event last Saturday.  I usually join the recipe swap for a couple of reasons. 

1. I like to try new recipes and the best ones are usually shared by friends, kwim?

2. It keeps me on my toes to get my family’s favorite recipes scrapped.

3. I love to see how creative the cards can be…some are just amazing!

The recipe card I chose to make this time was simply of my favorite frostings. 

I kept it fairly simple and stuck with pink and red.  The card base is Confetti White to hopefully resemble a confetti cake. 

I made the chocolate peanut butter frosting this weekend…yum!  I think I’ll go have a piece.  😉

herb baked fish…yum!

I hope you are enjoying your long weekend!  We will have a meal with family later today. 

I have a few projects that I haven’t shared yet and I was reminded of this one.  DH is out on his boat fishing this morning so I thought this recipe card would be fitting for the day.  I have made this for years…it’s a yummy way to bake fish!


The Penny Johnson Fishing Bear image was the first to come to mind when I started and I like how it turned out.  Did you notice the real fishing hook and line on the fish’s mouth?  I poked it through so the sharp points would be covered.  And the line goes up and connects to the end of the line in the image.

The fish shape was created on the computer and then I placed the text inside.  Here’s a close-up…

Is it a beautiful day today or what???  LOVE this weather!

The only yucky part of the day is the computer problems I’m havin’.  I hate those nasty bugs!  Hopefully I’ll be able to edit my pics soon but in the meantime, here’s a few that I haven’t shared yet.

These are my recipe and ATC swaps from the Buffalo gathering I attended 2 weeks ago.  This recipe swap was inspired by one a friend of mine had done.  I thought it was such a handy idea!

I printed everything out on vellum cardstock and used my Bumble B. Bear set.  (BTW, if you like recipe sets…I just wanted to let you know that ATS is retiring some of mine here.)


Here’s the back….I couldn’t fit it all on the front!


And here’s my ATC.  I stamped the old Coke image on glossy cardstock.  The background is an old Coke Ad that I printed off the internet.  Since it wasn’t on glossy paper, I attached a layer of acetate over the background ad with a glue dot. 


…and here it is opened… I stamped the “memories definition” on top of the acetate.
